Tips on Healthy Eating in the Salon

Since we are trying to be a little healthier again this year, it seemed like a good idea to attend a class on how to meal prep for healthy eating in the salon. ISSE Long Beach featured guest speaker Katrina Goldberg, who is a lifestyle coach in Southern California. If you would like to follow her on Instagram for more ideas, her handle is @Sparkle_katrina.

In her class she talked about a few different recipes that we were able to sample at the end of class. She also offered a tip for fresh vegetables: Cut them up as soon as you get home from the grocery store. That way they are sitting in the fridge prepped and ready to be added to a recipe or eaten raw right out of the container. She explained that we are less likely to waste the veggies when they have been pre-cut.

Are you as bad as I am when it comes to being too busy to cut something up for dinner and then forgetting it’s in the fridge until it’s yucky?

A great suggestion from Katrina was to leave your shoes on when you get back from the grocery store until you prep the veggies. This keeps you in the mindset that things still need to be done, instead of thinking, “shoes off and time to put the feet up.”

Here is a recipe she gave in class that’s easy to make and keeps in the fridge for up to three days, so you could portion it out for several salon lunches or even as a side for dinner.
